The meat of mature or almost mature cattle is mostly known as beef. In beef production there are three main stages: cow-calf operations, backgrounding, and feedlot operations. The production cycle of the animals start at cow-calf operations; this operation is designed specifically to breed cows for their offspring.
I can dig a little deeper. “Beef” is a Middle English word derived from the Latin word bos (and the stem bov-), meaning cow. When the French ruled England after the Norman conquest, the French word buef (boeuf in modern French) came to be associated with the meat while the Anglo-Saxon word cu continued to refer to the animal we now call a cow. My best answer was many meat products have a different name when they’re on the shelves of a grocery store or a butcher than the name we use to refer to the animal itself. For example, we refer to the meat as pork and venison, rather than pig and deer.
