How do cows produce milk all the time?

Prolactin (a protein) levels are stimulated when the udder is suckled by the calf or milked by the milking machine and this needs to occur for milk production to continue. Dairy cows are selectively bred to produce high levels of milk and this is far more than a calf could normally drink.

It is capable of producing large volumes of milk literally every year as it is successfully impregnated while still in early lactation period to produce a calf, thereby leaving the cow dry only for about 60 to 70 days in a year under ideal conditions. In its entire life span a cow generally produces about 7 to 8 calves thereby that many lactations.

Why do cows produce more milk than ever before?

There are fewer than half as many dairy cows in the United States as there were back then, but now they produce almost twice as much milk. One of the reasons for this huge rise in milk production, said dairy expert Mark Stephenson, is the introduction of artificial insemination.

Another thing we wondered was; why would farmers breed cows that produce more milk?

The Jersey breed, one of the oldest dairy breeds, has been pure for six centuries. Jersey cows are known for their adaptability, tolerance to heat and the ability to produce more milk per kilogram bodyweight with a higher butterfat content than any other breed. Jerseys are also known for their docile, easy temperaments.
